Petit Sainte Maure

Petit St Maure goat's milk (lactic) cheese from Poitou-Charentes: quite mild with a fresh aroma and a bit tangy when young, but when at the right point it is very nicely balanced with undertones of citrus and a slightly chalky consistency. It is not that strong, and it is good as a first goat cheese for someone unaccustomed to them.  3/5
